But after a while, I started to develop my own style of eating, in which I became a bit more lenient towards certain types of food, that mostly fall into the gluten free category.
Even though I'm not (diagnosed) celiac, I did notice that food with gluten affected me personally, and after tests with leaving gluten out and adding it back in, a few symptoms arose:
- nosebleeds
- painful joints
- acid reflux
- bloating
- blood sugar spikes
- mood swings
Will I never eat gluten again? Probably not. But I choose to avoid it and save my nosebleeds and mood swings only for the really good stuff every once and awhile.
Going gluten free has gone through a major rise this last year (definitely in my country) with the shelves in supermarkets filling up with all sorts of gluten free products.
One thing has to be remembered however: gluten free doesn't necessarily mean healthier, so it's always wise to read the labels.

So when I make something gluten free, I prefer to use my own ingredients, instead of buying a product stuffed with corn for example.
This time, I wanted to take a shot at a gluten free pizza base.
Ingredients (2 medium sized pizza's)
2 cups of oat flour
1 cup of rice flour
1 tsp xanthan gum
3 tbsp sugar
1 tbsp yeast
1 tsp baking powder
1 tsp salt
1 tbsp olive oil
1 1/4 cup warm water
Tools:
2 mixing bowls
baking paper
whisk
thermometer
rolling pin (or wine bottle)
Step 1
Boil the water and let it cool to about 40C (110F) using the thermometer. Take 3/4 cup of it and mix it with the yeast in a bowl. Let it sit for at least 5 minutes, and add 1 tbsp of sugar a few minutes in.
Step 2
Mix the oat flour, rice flour and xanthan gum together in a bowl.
Then add in the baking powder, salt, and remaining sugar and mix well again.
Create a little "bowl" in the middle of the flour mix, and pour in the yeast, the olive oil and the rest of the warm water. Mix this well together, the dough can become a bit sticky.
Step 3
Scrape the dough out of the bowl and form into a ball. Split it then up into 2 smaller balls.
Take 2 pieces of baking paper and lightly coat them with a bit of olive oil.
Roll the balls out into a flat pizza base.
Step 4
Heat the oven to 180C (350F) and place the pizza bases in the oven and bake for about 20 minutes.
Step 5
When the bases have been cooked a bit, take them out and finish making your pizza, with toppings of your choice.
Step 6
Bake for another 20-25 minutes. Enjoy!
