These cookies are simple to make, only include 3 ingredients and are nut free. Instead the usual nut flours, I used the versatile coconut flour. Coconut flour handles higher temperatures better, doesn't oxidize, is high in fiber and low in carbs.
Preparation Time: 10 minutes.
Total time: 20 minutes.
Makes 12 cookies.
Ingredients:
120 grams of coconut flour.
90 grams of unsalted butter.
60 grams of honey.
Instructions:
Put the coconut flour, butter & honey in a food processor. Blend until smooth. Roll the dough into 12 balls, and lay them out on a cookie sheet. Press them down until flat.
Bake in the oven on 160C (320F) for 10 minutes. Let them fully cool and store in an airtight container.
