Shrimp Fried "Rice"

Cauliflower might not seem very exciting at first, but it's a great vegetable to replace some of the mainstream foods, such as potato & rice. It's a good source of vitamin C, fiber & sulforaphane.

If you are a big fan of fried rice recipes, then this might be a great low carb/paleo/whole30 alternative for you.

1/2 head of cauliflower
1 lb of frozen shrimp, thawed & peeled
2 carrots, sliced
2 onions, chopped
2 celery sticks, sliced
1 tsp chili flakes
3 cloves of garlic, chopped
3 eggs
3 tbsp coconut aminos
coconut oil for cooking

To make the cauliflower rice, chop the cauliflower into chunks. Fill a blender with water, add in the cauliflower and pulse until it forms rice. Strain in a colander.

Microwave the rice on high for a few minutes to cook it a bit (optional)

In a wokpan, heat the oil and cook the onions for a few minutes, then add in the carrots, celery, garlic, chili & coconut aminos. Cook more for about 5 minutes, the add in the shrimp. When the shrimp are cooked, mix in the cauliflower rice. Stir it around well, adding in the eggs in the last few minutes.

Serve topped with some cashews and chives. Enjoy!
