The key ingredient (I believe) is the fennel, this gives it it's distinct taste and it's delicious.
First, you need to have an Italian herbs blend, which you can obviously buy, but it's easy to make as well. All you need to do is to mix equal parts of:
- Rosemary
Oregano |
- Oregano
- Basil
- Marjoram
You can add other herbs as well, like sage, dried garlic, parsley, etc., but this is a good base.
Then for the Sausage Blend:
2 tbsp Italian herbs blend (above)
3 tbsp dried parsley
1.5 tbsp fennel seeds
1 tbsp garlic powder
6 tsp salt
4 tsp paprika powder
4 tsp chili flakes
2 tsp sage

Put all spices in a food processor and pulse them a few times. This will break up some of the fennel seeds for extra flavour.
Store in an air-tight spice jar.
