Have to admit, that granola is an old favorite. In my "wheat days" I could even eat it for dinner, preferably with the amazing yogurt we have here (sold in liter packs)
It disappeared from my life since I went paleo, and breakfast is now usually warm, with eggs and bacon. However, sometimes it's nice to change things up a bit, and with a nice dairy-free recipe for cogurt, this was the perfect chance to make a paleo granola.
You need:
1 cup of almonds
1 cup of walnuts
1/4 cup of pecans
1,5 tbsp chia seeds
3/4 cup almond flour
1 vanilla bean
1 tsp of cinnamon
1/4 cup apple sauce
1 ripe banana
1 tbsp lemon juice
Heat the oven to 180C (350F)
Grind the nuts in a food processor, and mix in the other dry ingredients. In a separate bowl, puree the wet ingredients together. Add in the nuts and mix it together into a crumbly consistency. Spread the mix out onto a sheet of baking paper and place in the oven. Bake for about 25 mins, keep an eye on it to see if it browns evenly, turn the oven rack if needed. Let it cool and store in an air-tight (BPA free) container.
