Egg Foo Young is an omelette, usually made with a mix of veggies and meat, or sometimes fish. It's quite easy to make, and also perfect to make in advance to save time in the morning for breakfast.
The recipe below makes 6 omelettes.
You need:
8 whole eggs
250 grams of chicken breast
1 tbsp coconut aminos
2 spring onions, sliced
1 tsp of all spice
1 tsp of chili flakes
Cook the chicken until fully cooked, then cut into cubes. Whisk the eggs, then add in all the ingredients.
Heat some coconut oil in a pan, and use a ring (about 17 cm diameter) to pour some of the egg mixture in. Let it brown on both sides.
