Hash browns are great for breakfast or as a side dish, and usually made from white potatoes. An attempt to make hash browns from sweet potato didn't go too well, and celeriac is a great substitute for white potato, and also makes really tasty hash browns!
Ingredients:
1 celeriac
3 eggs
salt & pepper
optional: chilli flakes
coconut oil
In a food processor, shred the celeriac into strips. In a bowl, mix the celeriac with the egg and spices.
Heat the oil in a pan and scoop small batches into the pan. Let it brown properly before flipping them over.
Of course you can use other spices as well, like curry, paprika, ginger, etc.
