Choc-Attack Muffins

If you are in need of a quick chocolate fix that's easy to prepare and not too high on the sugar, then keep reading.

My favorite gluten-free flour is coconut flour.
Baking with coconut flour can be a bit tricky, since it absorbs quite a bit of liquid, but adding in a proper amount of liquid will sort that out easily.

You need:

heaping 1/4 cup of coconut flour
1/4 cup of cocoa powder
5 eggs
1/4 cup of coconut oil, melted
1/4 tsp salt
1/4 tsp baking soda
3 tbsp coconut nectar
Optional: 4 tbsp dark chocolate chips

Heat the oven to about 180C (350F)
Mix all the ingredients well, set up a muffin pan lined with muffin cups or papers. You could spray the tin with oil and pour the batter in directly, but personally I prefer to use silicon muffin molds.

Bake the muffins for 15-20 mins.
