When I was in Bali, a cookingclass was high on my wishlist, and we were fortunate enough to get one from the head chef at the Ashyana Resort in Candidasa. We were the only 2 that day, and after a visit to the morning market, we made 5 dishes, which I intend to share in the near future.
A lot of dishes are cooked with a spice mix, called bumbu. There are a lot of variations, but usually contain shrimp paste, chillies, etc.
You need:
150 gr shallots
50 gr garlic
50 gr red chili
30 gr fresh ginger
15 gr turmeric
30 gr galangal
10 gr shrimp paste
30 ml oil
The chef told to cook the garlic cloves in water for about 10 mins.
Mix it all in a food processor until smooth.
Add the bumbu to stir-fry, sate lilit, curries, etc.
