To follow up after the injera recipe the other day, it was time to make Doro Wat. It can be made with beef, lamb or in this case, chicken.
First, you need the spice mixture, berbere to flavour the doro wat, so here we go:
3/4 cup paprika powder
2 tsp salt
1 tsp ginger powder
1/2 tsp fenugreek
1/2 tsp coriander
1/2 tsp cardamom
1/2 tsp nutmeg
1/4 tsp cinnamon
1/4 tsp ground cloves
black pepper to taste
cayenne pepper to taste
As you can see, the berbere can include quite a few spices and varieties, you can play around with it a bit.
Next up, the doro wat!
2 onions, chopped
1 can of diced tomatoes
4 cloves of garlic, chopped
500 grams of chicken, cubed
coconut oil
5 tbsp berbere
Optional: 4 hard boiled eggs
Cook the onion and garlic in oil until translucent. next, add in the berbere & tomato and stir well.
Add the chicken and set to a low heat, so it continues to simmer with a few bubbles. Cook for about 30 mins. stirring it occasionally.
Eggs are optional to add in when the chicken is tender.
