19 Days of Whole30: Day 9

Today is halfway day, and things are still going as planned! My experience so far is that when you've done a Whole30 before, things are a LOT easier the next time around, although I am looking forward to raise a glass of champagne on May 26th to celebrate the beginning of our holiday.
Yesterday we did admit to eachother we missed bacon a little, so perhaps this weekend one of our breakfasts will have a bit of bacon.

This morning I scrambled some left-over carrot noodles with eggs and jalapeƱo, and had a small bit of almonds, frozen blueberries and coconut chips on the side and half an avocado.

Next up, were green beans and the meatballs with sauce....














In the afternoon I had a boiled egg, some coconut chips and a fruit leather (not too impressed with that)

For dinner, I had a few things in mind I wanted to try:
saffron cauliflower polenta
homemade veal burgers

The burgers were rather simple to make, I mixed 1 egg with 300 grams of minced veal, added about 1 tbsp of coconut flour, cayenne pepper & chives together. Made 3 patties out of it and cooked them until brown on both sides.



Served the polenta with the burgers and steamed broccoli.
