So Sunday is prep day and this is a great meal to prepare beforehand and heat up in the morning.
600 grams of ground beef
1 bag of fresh spinach
2 small onions, chopped
2 tsp fennel seeds
1 tsp rosemary
pepper
chili flakes
coconut oil
lemon juice (why?)
Add any type of left-over veggies, in my case grilled fennel & red bell pepper.
Cook the potato in oil for about 10 mins, then add the onion, beef & spices. Cook for another 5 mins. Last, add the left-over veggies, spinach & lemon juice and mix well. Cook for 5 more mins on low.
In this batch, I topped it off with some pistachios.
This is a great breakfast served with some
sliced apple & avocado on the side.
Tip: serve it in a Pure Wrap!
