Whole30: Day 30!

Today is officially the last day, although we already know it's not really the last day. Either way we will add 2 more full days to the series, made dinner reservations for Friday night where we will most likely enjoy our first glass of wine in 36 days (who's counting? who? me?)
Are we afraid? Yes. My partner is afraid for waking up more difficult again. I'm afraid my crossfit performance will suffer. Afraid we'll feel like crap. 
Apparently, it's normal to be afraid. The thing is, in case something like that happens, we know why it is and how to fix it. And the knowledge of how food can determine so much in life (good or bad) is probably the best thing I've acquired during this whole30. That and 
being able to put food in it's proper perspective.



Again I had an early morning training, so had a small meal; banana, some coconut milk, frozen blueberries, almonds, coconut chips and a few raspberries. Maybe not ideal, but it did the trick.



After getting to work, I had a lean protein source, came to the conclusion that tuna was the safest option, so mixed up a can of tuna, bit of tomato paste & cucumber. 

Next meal was left-over green beans, broccoli and the beef bolognese sauce. 






At about 4.30 pm, I got hungry again, so finished the tuna with some walnuts and shredded coconut on top, so far probably the strangest combination of foods I've eaten :-)









I was excited to try a recipe I found for legume-free falafel. Original is found here, but I am actually so excited about the result, that I will post it as well.

I ended up with a lot more (3 batches) but we did not mind that at all!




1 cup of pureed cauliflower, this is a quick way to grate the cauliflower.
1/2 cup of almond flour (ground almonds)
1 tbsp ground cumin
2 tbsp dried parsley
3 tbsp coconut flour
1 tsp salt
1 tsp garlic powder
1 tsp coriander powder
1/2 tsp chili powder (spicy)
2 eggs

Mix all of the ingredients together in a bowl, and form small patties (7-8 pieces) Cook in a pan with coconut oil on both sides until brown. Seriously, if you didn't know, you'd swear they were the real deal! One of the best recipes I've made during this whole30!
