lingering back again. Went away after a few hours. Have been taking the Super Enzymes from NOW the last few days, to see if it helps with my, ahem, digestion a bit.
Will report back with my findings soon :-)We started the day with an egg scramble, salami, sweet potato & zucchini hash and avocado. On the side a fruitmix of coconut milk, banana, berries & brazil nuts.
Banana is not the most ideal fruit, since it's high in sugars, but it still is delicious every now and then ;-) Although I probably eat more bananas than Whole30 would allow anyway. For me it works really well as a pre-workout snack, as long as I have it with a fat source as well.
Before we went out to walk to the market and get our groceries, we both had an apple with some almond butter.
Coming back at about 5 pm, I was quite hungry, even a bit of low blood sugar, so had some slices of chicken, about 8 almonds and a few scoops of cold left-over stir fry.
We planned to go to the movies, so I wanted to make something compliant we could sneak in.
So I made a type of "trail mix":
1/2 cup pumpkin seeds
1/2 cup sunflower seeds
1/4 cup unshelled hemp seeds
2 tbsp coconut oil
1/4 cup coconut chips
1 tsp paprika powder
1 tsp chili powder
1/2 tsp salt
1 tsp satay spices
Melt the oil, then mix all the ingredients together and place on a sheet in the oven on 140C for about 15 mins. Let it cool, then place in the fridge so the coconut oil can harden a bit.
Next, I sliced to medium sweet potatoes, placed them on a sheet, sprinkled them with olive oil, salt & pepper and baked them for about 25 mins. Half-way, turn them for extra crispiness.
We then had a delicious meal; a sweet and spicy beef and broccoli, with some dried mango and onion, topped with a few coconut chips. A big side salad with avocado, it felt like we were in a restaurant! ;-)
