Stuffed Bacon-Wrapped Chicken

Ha, got your attention now, right? This was a delicious creation made by my better half, and boy, was it good! Ever since I stepped off the vegetarian wagon and onto the carnivore speed train, bacon has taken in a prominent spot in my life. Found a sugar free bacon at one of our favorite supermarkets, so there is always a stash of it in the fridge.
Combine it with some organic chicken, and you've entered heaven.


2 chicken tenders
8 strips of bacon
1 onion
paprika powder
black pepper
1 tomato, sliced
1 can of diced toma

Slice the tenders open lengthwise, fold open and fill them with slices of tomato, onion and a strip of bacon. Sprinkle some paprika & pepper and close. Next, wrap 3 slices of bacon around each tender.
Pre-heat the oven to 180C (350F) and place the chicken in  a baking dish. Add the can of tomatoes, and cook for about 25-30 mins. until the bacon is crispy. Serve on top of cauliflower rice with a side salad.
