Google+ Cave Food Kitchen: Pumpkin Spice Granola

Pumpkin Spice Granola

Before you start to shriek; PUFA's! PUFA's! Yes, I know you're right, but then again, this recipe is not meant for consuming in massive amounts, or meant to made into a diet staple.
Mark Sisson has good articles on nuts & seeds I recommend reading, and like we all know, moderation is key.

Anyway, I was thinking, Batman needs his Robin, so to accompany the cogurt, I wanted to create a little crunch to go with it.
First, a pumpkin spice mix. This is not something you can buy in the store here, so I made one myself:

4 tsp cinnamon
2 tsp ginger powder
1 tsp nutmeg
1 tsp all spice

Next, the "granola":

1 cup raw almonds
1/2 cup pumpkin seeds
1/2 cup sunflower seeds
1/4 cup whole hemp seeds
1/4 cup coconut chips
2 tbsp cocoa nibs
2 tsp pumpkin spice
1 tsp cocoa powder
3 tbsp coconut oil

In a grinder/blender/kitchen machine, pulse the almonds a few times, so they break up a bit, but still remain chunky. Melt the coconut oil.
Put all ingredients in a bowl and mix well, so all of it is covered in the oil and spices.
Heat the oven to 140C (280F) and spread the mix out on a cookie sheet. Let the mix crunch up a bit in the oven for 15 mins.

For a sweet taste, I added afterwards:

1/4 cup goji berries
1/4 cup raisins

Let it cool and keep in a container in the fridge, so the oil solidifies and you can break it into clusters.

  1. You're missing a couple ingredients, you have measurements but there's no ingredient next to it.
