Moroccan Chicken & Cauliflower Couscous

The Moroccan cuisine is very flavorful, and I love the combination with salt & sweet.
Add the spices, and you have a fantastic tasty meal!




Serves 4 people:

2 onions, chopped
2 cloves of garlic, crushed
1/2 tsp cumin
1/4 tsp ginger powder
1/4 tsp turmeric
2 tbsp orange juice
2 tbsp honey
salt to taste

In a pan, heat the oil and cook the chicken until brown on both sides. Add the spices, salt onion & garlic, the juice & 1 cup of water and bring to a simmer for 30 mins. Last, add in the honey.

Meanwhile, make the "couscous", using 1 head of cauliflower. Steam the cauliflower until tender, then add the following:

1 tsp salt
2 tbsp olive oil
2 tbsp raisins
1/2 tsp cinnamon
1/2 cup chopped almonds
3 tbsp chopped pistachios
pinch of nutmeg

Mash it all together, serve the chicken on top and drizzle a bit of the sauce over it.
Serve with steamed veggies (optional)
