Whole30: Day 9

Kale is a very common vegetable in The Netherlands, and when I started paleo and saw everyone raving about this vegetable, like it was a new discovery, I had to giggle a bit. Remembering the time I lived in the USA about 12 years ago, and decided to make "boerenkool stamppot" (kale mash) and I had to empty out the entire supply of kale in the supermarket and getting funny looks at the cash-register. Luckily it has become more known everywhere and there is a lot more you can do with kale then just make chips out of it. Kale is incredibly healthy and awesome, rich in vitamins C & K, and is the perfect winter vegetable. It can withstand very low temperatures, up to -10C.
The mash is a very traditional dish in The Netherlands, but it's made with white potato. 
Kale can be used in many other ways though, and this morning I decided to include it into my first meal, omelet. Cook the kale for about 5-10 mins in coconut oil before adding the egg.
Adding a few jalapenos gave it a little kick, with a tsp of almond butter and applesauce on the side, it was a perfect start of the day!



Amsterdam was covered in about 10 cms of snow, 
so basically derailed the entire transport system, 
but it did look nice.


The next meal was the same as yesterday, chicken & stir fried veggies, cashews and coconut chips.


I had this meal rather late, so that kept me going until the evening. Did a small home workout, and still wasn't hungry!
Picked up veggies from our vegetable subscription, and started the last meal of the day;

2 small burgers, green beans & zucchini with a side salad. Last week, I made an attempt to make my own mayo, and even though I've done it several times before, it didn't seem to work. Luckily I found sugar free mayo, too bad they use sunflower oil in it, so I'll use it sparingly.












Prepared lunch for the next 2 days, which aren't very creative (and a bit repetitive) but they are definitely according to the Whole30 guidelines.
