Whole30: Day 7

Sundays are for preparation of the coming week, but also a day for another elaborate breakfast and nice coffee.
The day kicked off with a portobello mushroom under the grill, 3 poached eggs, jalapeños, cherry tomatoes & avocado.
I had to skip the berry mix with coconut milk and nuts to save for later!






Afternoon:
A nice walk in the park and taking a few snapshots in my own neighborhood, always fun! 

Preparations for the week were cooking some chicken for lunch, and trying a great zucchini hummus recipe, found here.

I finished the berrymix with coconut milk & nuts with tea.


Curious to find out how the hummus turned out, at about 5 pm we had some with cucumber sticks, very nice, but perhaps i'd use a bit less lemon juice next time.




Dinner was a delicious rich pumpkin/sweet potato/celeriac/parsnip/spinach soup, accompanied by chicken sausages and a salad. Another great day, great food, lunches prepared for 2 days, ready for week 2!
