Sometimes after quite a few days of bacon and eggs for breakfast, you might want to change things up a bit. This time I decided to experiment a bit, turning eggs into a more sweet dish.
This recipe makes 6 muffins.
4 eggs
1/2 cup blueberries
1/4 tsp cinnamon
1/4 tsp cocoa powder
2 tbsp shredded coconut
Whip up the eggs with the cinnamon and cocoa powder, and line up a muffin pan with either muffin papers or molds. Fill them halfway with the mix, then add blueberries and the shredded coconut. Add the rest of the mix. Bake in the oven for about 10-12 mins on 180C (350F)
Serve with nuts, coconut manna, coconut milk or perhaps some fruit, or just eat plain :-)
Yummy! It's such a pity I am only on the 3rd day of Whole30 and can't have any paleo-fied food. But I sure will make those after my thirty days :)
ReplyDeleteI was so disappointed to find out it was considered paleo-fied food! I wonder if I had made it in a different mold (like an oven dish) would it have been judged different? How is the Whole30 going so far?
