It was a week of a lot of cooking, but yet I still had a lot of stuff to choose from, so I decided to mix it all up together and make an easy oven dish.
3 medium bell peppers
500 grams ground beef
1 leek, chopped
2 cloves of garlic, chopped
1 small green cabbage, chopped
1/2 bag of stir-fry mix
coconut oil
1/4 cup feta cheese, crumbled
some shredded cheese
Cook the leek & garlic in oil together for about 5 mins, then add the cabbage and the mix. Add spices to your liking, I experimented with chili, salt, ginger powder & tarragon.
Last, add the beef and let it all cook on slow heat for 10-15 mins.
Meanwhile, hollow out the bell peppers and cut a bit off the top so you can stuff them more easily with the beef mix. Put the crumbled feta and shredded cheese on top.
Place them in a deep dish and bake in the oven on 180C (350F) for about 15 mins.
Serve with, in my case, some salad, cottage cheese & olives. A spicy dressing made the other day, served on the side. For the dressing:
2 tsp sambal oelek
1/4 tsp garlic powder
3 tbsp olive oil
2 tbsp sesame oil
1 tbsp coconut vinegar
2 tbsp sesame seeds
All these different tastes made for an excellent meal!
