Pistachio Salmon Satay

Not sure about you, but I LOVE peanut sauce. If you are strict paleo, look away now, but that is something I really enjoy every now and then. Here in the Netherlands it's very popular, mostly because we have adopted a lot of the Indonesian kitchen, but also because we have a rather weird food tradition: french fries served with peanut sauce (or as we call it, satésaus) raw onion & mayonnaise. Anyway, got sidetracked here, now focus!

So, this recipe was an experiment, and brings in a little of the satay flavor, with a little twist:

2 pieces of salmon
2 tbsp pistachio butter
1 jar of tapenade (130 grams)
3 cloves of garlic, chopped
2 shallots, chopped
oil
chili flakes (to taste)
1/2 cup of water

Cook the shallots in oil for a few mins, then add the other ingredients, except for the salmon. Let it cook for about 5 mins, while stirring well. Then add the salmon and let this heat up for about 2 mins, take off the heat and make sure the salmon is fully covered. After about a minute or 3-4, put it back on the heat for another 5 mins.
Serve over zucchini noodles and with a salad!
