A while ago, I made a pizza where the crust was made of cheese & almond flour (recipe here)
But putting nut flour in a high temperature can cause the nut flour to oxidize, something you'd rather avoid. So this time I made my first attempt with coconut flour.
It takes some preparation in stages, but it's well worth it!
1/2 cup coconut flour
3 eggs
1 cup of coconut milk
1/2 tsp baking powder
1/2 tsp baking soda
1 tsp garlic powder
Mix all the ingredients together, make sure there are no lumps. Pre-heat the oven to 180C (350F) Spread the mix out on a baking sheet.
Bake the base for about 20 mins., or until brown.
Meanwhile, make your favorite pizza sauce (or use a pre-made one) and choose your toppings.
When the base is done, flip it over and top it with the sauce and your favorite fats & protein :-)
Bake for another 10-15 mins.
* Note: I actually found that half the mixture was enough for 1 pizza, but you decide :-)
