Chicken in Green Almond Sauce

Based on a Mexican recipe, which originally calls for tomatillos. Unfortunately, tomatillos are hard to find here, so I decided to look for a substitute, taking a chance with green peppers.


Ozzie Spice Mix ;-)
Part 1: (chicken in broth)
500 grams of chicken
2 cups of water
1 onion, chopped
1 clove of garlic, chopped
3 dried chilies (very spicy)
1 carrot, sliced
1 celery stick, sliced
2 tsp of spice mix (any will do)
pinch of salt

If you're lazy, of course you can use 2 cups of chicken broth...



Part 2: (sauce)
4 green peppers
1 yellow pepper
1 red chili
1 cup almond flour
1 onion
1 clove of garlic
coconut oil
salt to taste
If not liquid enough, add a bit of water (or broth)




Cook the chicken in the broth for about 45 mins, until tender.
Meanwhile, mix all the sauce ingredients in a pan and puree with an electric hand-blender. Cook for about 2-3 mins. until hot.
Serve the chicken on cauliflower rice, with a few scoops of sauce on top.
