When wintertime arrives in The Netherlands, it means it's time for a traditional dish again; stamppot (mash pot according to Wikipedia)
Usually it's made with endives, sauerkraut, carrot & onion or kale, but there a many variations.
Problem is that the other main ingredient is potato, so that can be a bit of a problem. But, there is a great substitute that will taste just as great and is equally simple to make.
Ingredients:
500 grams of chopped kale
1 large celeriac, peeled and cubed
100 ml heavy cream (or coconut cream)
50 gr butter (or ghee)
salt & pepper
1 rookworst
250 grams of lardons
Cook the celeriac in water with the kale on top for about 20 mins. Drain the water out.
Add the cream, butter, pepper and salt. With a masher, mash it all thoroughly together until it's smooth.
Serve with some gravy and a piece of rookworst. Sprinkle the bacon on top or mash it in as well.
