My mind was set on making it this weekend, so here are the results:
1 cup chredded Gouda (not smoked, eating smoked Gouda for Dutch people is like riding a Vespa with a helmet on for Italians, WHO the hell invented that crap?? Really, i'm insulted)
1 cup almond flour

Really, that is all you need. Microwave the cheese for a bit, then mix it with the almond flour & egg. Roll into a ball, then flatten out in a frying pan.
Cook it like sort of a pancake on both sides till brown.
Make your own pizza sauce, i just mixed a can of peeled tomatoes with a small can of tomato paste. Added some galic powder, onion powder & cloves powder to taste, simmer for a bit, done.
Pre-heat the oven, and then on a piece of baking paper, assemble your pizza together with your favorite toppings. In my case:

Bake in the oven for about 15 mins. on 160C.
Verdict: DElicious!
Warning! This is very filling, after 1 half I was very full!
