Fudge Brownie

I could have given it a more exotic title, like Ketogasmic Brownie, but decided to stick with what it is; a fudge brownie. 
A low carb one, that is. Run to your pantry and get the following:


1 cup of coconut oil (melted)
2 tablespoons of erythritol (optional)
1/2 cup of softened mascarpone
1/2 cup cocoa powder
3 eggs
1/2 cup almond flour
pinch of salt
vanilla extract
chopped walnuts (optional)

Preheat the oven to about 180C (350F)
Mix all the ingredients together, in my case i used a hand mixer. Lots of recipes like this tell you to sift this, premix that, i am probably committing kitchen blasphemy by mixing it all together at the same time like a 6 year old. Anyway, it works for me, feel free to follow your own strategy.
Pour the batter into a loaf-pan, baking dish, whatever you have at hand. Bake in the oven for about 30 mins. 
If you opt for not adding the erythritol, it will not have a very sweet taste, but will for sure satisfy your fudgy cocoa cravings.
