Keto Choc Pudding

After a 10 day vacation in the USA, it was time to get back on track again!
This week i've implemented another Keto week, to get my body back to "normal". It was interesting (and horrifying) to read labels on food products, i've never seen the words "soybean oil" "evaporated cane juice" "high fructose corn syrup" "canola oil" so often in my life. The sad part is, in most products these are the first ingredients on the label, meaning there is a lot of it in the product (personally, i think soy is overrated and under estimated anyway, so it's a double catch-22)
Don't even get me started on the crap airlines feed you on the plane, but that's another topic altogether. Our breakfasts in new York usually looked like this:



So, upon arriving back home, a trip to the supermarket was a priority! Must say, Whole Foods market has become even more awesome over the years (jealous)
After dinner last night, i experimented a little with a dessert recipe, it ended up being quite rich, so couldn't even finish the bowl:

1 tbsp Mascarpone
2 tbsp almond butter
1 tsp cocoa powder
1 tsp optional sweetener

Mix all the ingredients together and enjoy!
