Walking past the vegetable section in the supermarket, i realized i hadn't eaten endives in quite a while, so in a reflex, it ended up in my cart.
Upon coming home though, i started wondering what to do with it. The traditional Dutch way was not an option (although maybe with a cauliflower mash?) so now what?
Last night was one of those hurried, out of the gym kind of nights, so i quickly grabbed a few things from the fridge and while cooking, decided to throw in the endives.
300 gr sliced beef
2 tbsp butter
chili flakes (to taste)
1 tsp ground cumin
1 tbsp sesame seeds
1 clove of garlic, chopped
about 10 big endive leafs, chopped
salt to taste
Melt the butter, add the garlic, cumin, chili flakes and sesame seeds. Cook for a few mins, add the beef and lower the heat. Let it simmer for a bit, i added about 1/2 of water as well. Last, add the endive and simmer again until the endive has gone soft. Add salt as desired.
Serve with a salad and/or steamed veggies. Maybe even sprinkle some Parmesan cheese on top.
