It's time to admit it, next to my egg addiction, i also am quite obsessed with chocolate. Not the milky stuff, but the bittersweet, dark decadence. From about 80% and up that is. Everywhere i go, i usually pick up a bar to try out. The trick is to find chocolate with the least amount of ingredients, such as soy lecithin, dairy and so on, but a lot of times it is just not right. So why not make my own? And i did. And more than just that.
Funny enough, it is surprisingly easy! Start with the following ingredients, and play around with it, until you get your own preferred taste:
1 cup of organic cocoa butter
1/2 cup of cocoa powder
2 tbsp coconut nectar (optional)
Melt the cocoa butter "au bain marie":
When completely melted, add the cocoa powder and the optional coconut nectar till you reach the desired taste. Meanwhile, line up your molds. I used silicone muffin cups, but you could also use a silicone ice cube tray for example or muffin papers. At least use something that makes it easy to remove the chocolate later.
But, it didn't stop here, i decided to create my own nut butter cups.
In each muffin cup, i poured a small amount and let it cool in the fridge. Once it is solid, scoop about a teaspoon of nut butter (almond butter in my case) and then pour the remaining liquid over it until fully covered. Store in the fridge or freezer.
