On my quest to find more breakfast variations around "the egg", i came up with this one this morning, while actually not having enough time in the first place. But it was easy, quick and tasty!
2 eggs
1/2 cup coconut milk
1/4 tsp cinnamon
1/2 cup of blueberries
1 tbsp coconut cream
slice of banana bread
Whisk the eggs, cinnamon & coconut milk together in a bowl. Microwave for 2,5 mins.
Scoop on a plate, add the berries, coconut cream & banana bread. Eat. Start your day.
