Eggs are back on my menu again, for a while, there was a theory that i might be allergic to them, so i was off eggs for 3....weeks....3 LONG weeks.
In that period, i finally fell off the vegetarian wagon and went back to meat. Quite effortlessly i might add, although eating meat attached to a bone still brings back horrifying childhood memories (i really don't like it)
By the way, if you are also vegetarian going back to meat, do it slowly. I jumped in with both feet and noticed that my digestive system had some issues (duh, it's been 14 years) To help my body a bit, i started taking probiotics, which was also recommended by Robb Wolf in his book.
Anyway, the breakfast pictured below might not be very exciting, creative, etc., but it sure works for me!
2 eggs (whisked)
1/2 avocado
3 cubes of frozen spinach
2 sausages (any kind will do really, i used bio bock-wurst)
coconut oil
salt & pepper
The only non-Paleo bit you need is a microwave (Before i get hate comments, and by the way, computers aren't Paleo either. Or plates. Or tap-water. So drop it)
Put the eggs in a bowl and zap for 2 min on high. Heat up the spinach and sausages, scoop the avocado on ya plate, salt & pepper to taste, done.
