I'm writing this post with a little wink to the 4-Hour Body by Tim Ferriss, a book i'm reading at the moment.
At the same time, posting the ingredients i used will most likely put me in the Paleo/Primal naughty corner. Or to be more specific; 1 ingredient called lentils.
Before reading Primal Blueprint, i was actually convinced that these little brown wonders were very healthy, and the lucky part is that they are pretty tasty too.
Millions of people in India consume them almost daily, so what could be so bad about it? A lot is being written about it already on Mark Sisson's blog, and it seems that legumes kind of fall in the grey zone. Turns out, i like grey zones a lot.
I was in the mood for a more hearty breakfast, so went for the following:
1/2 cup of lentils (canned, drained & rinsed)
2 eggs
salmon carpaccio (packaged)
1 tbs tomato paste
3 tbs tomato puree
1/2 can crab (drained & rinsed)
scoop of coconut oil
salt & pepper
Wisk the 2 eggs in a bowl, pop in the microwave for about 2 mins. Add the coconut oil on top with some salt & pepper. Mix the lentils, tomato paste & puree together and zap for about 1 min. Add some crab & salmon. Done.
If you're like me, you prepare some stuff the night before, like rinsing the lentils & crab. All in all it should really only take about 4 mins. to prepare in the morning. I know, cavemen did not have microwaves, but let's not fuss about that, ok?
