You know you are really a pro at Paleo when you read a recipe and you have all the ingredients already sitting in your pantry. Another dead giveaway is that you get totally excited reading the recipe, and finding it hard to wait to get started. When i ran across this one on realsustenance.com (my newest addiction) this all happened.
Eating Paleo and sweet stuff doesn't really go together (more about that in another post) but in this case, it totally does!
Ingredients
2 cups blanched almond flour
1/2 cup of Sukrin
2 tsp. baking powder
1 tbs olive oil
1 tbs vanilla extract
1/8 tsp salt
1 1/2 tbs almond milk.
2 tsp cinnamon.
3/4 cup grated carrots (patted dry with a paper towel)
some crushed walnuts to sprinkle on top.
1/2 cup of Sukrin
2 tsp. baking powder
1 tbs olive oil
1 tbs vanilla extract
1/8 tsp salt
1 1/2 tbs almond milk.
2 tsp cinnamon.
3/4 cup grated carrots (patted dry with a paper towel)
some crushed walnuts to sprinkle on top.
Make the cookie dough. Combine all the ingredients and just knead it. Press this dough evently into the bottom of the prepared pan.
Place in the oven and bake 30 minutes.
Remove from oven and allow to cool before removing it from the pan (in my case, putting it outside on the balcony works like a charm!)
