Red Palm Shrimp Curry

I was in the mood for a curry and just bought red palm oil (more on that later), so decided to bring the 2 together!


Ingredients: (for about 2)

red palm oil
2 cloves of garlic
2 chilli peppers
2 big carrots
1 red pepper
1 broccoli
4 celery sticks
200 grams of jumbo shrimp
coconut milk
1 tbsp curry powder
3/4 cup cashews (optional)
wok


Finely chop the garlic & chilli.
Heat the oil, and start with cooking the garlic, chilli and
shrimp. Chop up the carrots, celery, red pepper & broccoli and add into the wok. Then add the curry powder & coconut milk and let it simmer till the vegetables are tender. Last, add the cashews right before serving.
