Spinach Omelette

Not to sound too arrogant, but over the last few years i've managed to turn omelette making into quite an art.
So switching Paleo in that area wasn't too hard. Either way, i was experimenting with a few ingredients and wanted to share it with you. The following serves 2 persons:


5 eggs
2 big hands of fresh spinach
fresh cut chives
coconut oil
cup of almond milk
cayenne pepper (as desired)
2 tbsp grated Parmesan cheese (not really Paleo, but c'mon)
fresh lemon juice (1 tsp)
salt to taste


Heat the coconut oil and add spinach. Meanwhile, mix eggs, chives, pepper, almond milk & Parmesan in a bowl and whisk well. As soon as the spinach starts to cook a bit, add some lemon juice. This will remove the chalky texture from cooked spinach. Add the egg mixture and cook nice and brown on both sides.
When done, slice into 2 halves, serve with any garnish you like, i added half an avocado & a slice of my latest Paleo bread.
