In search of the best Paleo bread recipe, I made my first attempt yesterday.
This was the recipe:
Ingredients
• 2/3 cup flax meal.
• 1/3 cup almond meal.
• 1 1/2 tsp baking powder.
• Pepper to taste.
• Salt to taste.
• Approximately 3 tsp olive oil or coconut oil.
• 2 eggs.
• Water to make the batter pourable.
Directions
1. In mixing bowl, combine dry ingredients. In another bowl, beat eggs together. Oil loaf pan. Mix all ingredients and pour batter into the loaf pan.
2. 350 degrees for approximately 30 minutes until baked thru-out.
Result?
It turned out more like a loaf of bread-cake than a bread. I was already a bit skeptic about the “water to make batter pourable” bit, and in the end my batter was quite liquid, but certainly not pourable. So I wonder how moist it would have been if I had added more water.
Also, the taste in the beginning is good, but the aftertaste not so much. I added some sunflower seeds as well, but still I feel something was missing….
Any ideas? Suggestions? Attempt 2 will be posted soon.
