Sometimes you have to improvise in life, and last night was one of those times. We had our dinner all sorted, i was having another Pangasius filet, and my partner was going for a lamb burger.
Opening the container with Pangasius, the smell immediately told me this would a very stupid idea to still eat it. What to eat now? Luckily, there are quite a few websites out there already with recipes, so i found one for Coconut Salmon patties, and decided to use tuna instead (thank you fastpaleo.com!) Ingredients:
1 can of tuna
1/2 tbsp coconut flour
2 eggs
shredded coconut
pepper
coconut oil
Set out 3 shallow dinner bowls. Turn medium saucepan onto med-high with enough coconut oil to coat the entire bottom and then some. Then mix ingredients while heating.
Bowl 1: Mix drained can of tuna, coconut flour, 1 egg and pepper in a bowl until you get a nice unwet consistency (add tiny amounts of coconut flour until satisfied).
Bowl 2: 1 egg, whisked.
Bowl 3: shredded coconut.
Form patties from the mix (I made 3 total), place each patty in the egg, turn over, then do the same in the shredded coconut. Cook in the pan for about 5 mins per side. Absolutely great, although next time i'd add some chilli pepper to it to spice things up!
