Paleo Panic!

Ok, so deciding to enter the world of Paleo eating does not come without consequences.
Since coming from the Netherlands, you grow up with (and continue to live on) 2 essential food items you’ll find in every Dutch kitchen: bread & cheese.
It is probably the most consumed lunch item throughout, and even non-Dutch residents of the Netherlands are considered well integrated as soon as they whip out their bread & cheese at lunch time, and believe me, I’ve seen it happen.
Bread is consumed in high volumes, mostly for breakfast & lunch, and the variations are endless (whole meal, multigrain, white, sourdough, etc.)
Not even to mention the cheese…. The Netherlands is known for its cheese, and Gouda & Edam cheese are just the tip of the iceberg.


So, Paleo Panic is in motion. I started looking around for grain-free bread recipes, and found some. At this moment I’m still waiting for my order of linseed flour to come in, and I will post the recipe with a review on my blog as soon as possible.
But, the cheese……. I know that people did not eat dairy products until animals were domesticated, but looking around online I’ve read articles that point out that there has been adaptation to dairy products in some genetic lines, so could it possibly be that the Dutch are totally adapted? Am I kidding myself? Thoughts anyone? I’d like to know if there are people that have cut dairy out of their diet, have experienced positive changes (health wise, energy, etc.)


Giving up grains, ok. But the cheese….not the cheese! Help!
