Paleo Apple-Pancakes

Since introducing a Paleo diet cold-turkey seemed a little too much for me, i decided to start with making the first meal of the day a Paleo one.
My traditional muesli with yogurt & honey had to make way anyway, since when is it good for humans to eat the same meal every day over and over again?

So, i remembered this recipe i made some time ago, and made a few changes.
(i got 5 pancakes out of it)
If you make a batch in advance, you only have to heat them up in the microwave, easy and quick!


- 5 whole eggs
- 2 tablespoons of flaxseeds
- 1 tablespoon chia seeds
- dash of cinnamon
- 1 apple
- 1 tablespoon of coconut flour
- dash of almond milk
- coconut oil

Optional: Almond butter

Mix the eggs, egg whites, flaxseeds, coconut flour, cinnamon & almond milk together and blend well until smooth.
I used a coffee grinder to grind the chia seeds, and mixed them in as well.

Heat the coconut oil in a pan, and pour in the batter.
Add a few slices of apple, and bake on both sides until brown.
I put some almond butter on 1 half & folded the pancake, also great for on the go!
